Apricot, Pear and Orange Flapjacks

Whenever I am looking for a new recipe, or wondering what fruit and vegetables are ‘In Season’, the first place I always look is in the free magazines that all of the supermarkets do now. What incredible sources of knowledge they are. I have found many amazing recipes in these magazines. Some of them need… Continue reading Apricot, Pear and Orange Flapjacks

The A to Z of MS – Part 1

Over on my Instagram account @manchesterspirit I have been doing the #AtoZofMS, posting a letter on each day of July, well, with some exceptions because it is me and I am forgetful! The aim of this was to create a comprehensive guide to MS, from the view point of helping someone who has just been… Continue reading The A to Z of MS – Part 1

The A to Z of MS

So I… Continue reading The A to Z of MS

Lentil Ragu with Gluten-Free Pasta

This week's recipe is a yummy one! Before I changed to the Mediterranean diet, I had never eaten a lentil before in my life. Now, this is one of my favourite recipes! I know that sometimes wait times for appointments are long but having spent a lot of time going to hospital appointments in the… Continue reading Latest Medical Appointment

Today's recipe is a Potato and Lentil Soup, based on a recipe I found in Casual Cooking's 'Gluten and Dairy Free For Me' cookbook. I LOVE this recipe book. It has so many recipes in it… Continue reading Potato and Lentil Soup

Chicken Fajitas and Avocado Salsa

So, as I mentioned in my last post, I would like to share with you all some of the yummy things I have learnt to cook since starting the Mediterranean Diet. At the beginning I was so overwhelmed by it all, and I was very worried I would just be eating lettuce leaves from that point on. Which is not true. I don't even think I have eaten a lettuce leaf yet! So I would like to start with something easy. I found a recipe in a Marks and Spencer cookbook I bought ages ago, called Easy Salads. It is deconstructed Chicken Fajitas and Avocado Salsa. It is amazing! So tasty, with a citrus sauce on the chicken, and you can put it with whatever bits of salad you fancy. The recipe below is based on this Marks and Spencer recipe, with my little tips and adaptations added in there to make it MS friendly.
